*"Fear of missing out"

I'm facing my first Christmas eating ketogenically and whilst I love my new-found way of eating, I have to admit I've been feeling a tad FOMO with all the Christmas goodies that are currently rife in the shops. So I've done my research and will be prepping some keto versions of a few things in the next couple of weeks so that I have my own goodies to treat myself to over the festive period.

First up is gingerbread. Tadaa....

20191205_103724-800x450.jpg

And with my palate now well-adjusted to keto versions, these are absolutely stonking!! I've done a taste test (scoff, scoff) so the remainder will now go into the freezer, so that I can get a couple out when I fancy them :)

Next up are mince pies, rum truffles, chocolate brazils, stuffing and a Christmas pud!!

Who says keto is not sustainable because it's too restrictive?!! ;)

28lbs down and maintaining since August!

You've done so well :) I would love to do it, but it takes a lot of effort doesn't it, my lifestyle just doesn't facilitate being at home and cooking, maybe I will start prioritizing it more soon, I did try this summer but have fallen back into bad old habits.

Well done @domane you've done brilliantly. :)

Would you write a book for us NR's please, all your recipies etc, I can't even imagine how you can make gingerbread and mince pies etc without carbs?
I'm curious how you maintain your weight too? I would love to do a keto diet long term but because Im a lazy arse I only use it if I want to drop a few Lbs quickly.

Right, before I show you these photos, *disclaimer* I should like to assure you that I DO generally eat good quality meals with meat and veg, but I've been doing keto for 9 months now so I thought I'd share some pics of a few of my "normal food" keto alternatives....
I should also add that they still contain a few carbs, but I only tend to eat about 15g of carbs per day. On keto you have to stay under 20g.

Cauliflower cheese. You definitely don't need flour in a cheese sauce! I make mine with butter, cream cheese, cream and grated cheddar!

20191106_125807-800x600.jpg

Porridge. This is made with equal amounts of ground almonds, milled linseed and crushed sesame seeds mixed with almond milk. Cinnamon and Truvia to taste. Microwave 2 mins.

20190806_081426-800x600.jpg

Keto rolls. These are made primarily from ground almonds and/or linseed and egg whites....

20191019_193550-800x625.jpg

This is "cloud bread" made by separating eggs and mixing the white until it forms peaks. Obvs tastes quite eggy but if you add a little psyllium husk to it, it will hold its form enough to make burger buns.

20190617_165649-800x450.jpg

Pizza, using a cauliflower/mozzarella and parmesan mix to form the base..

20190515_153503-800x450.jpg

90 Second Bread is made from ground almonds (or linseed for a more nutty flavour), melted butter and an egg.... and microwaved for 90 seconds. Here it is "naked", but toasted, to show the texture....

20190502_090959-800x450.jpg

And with butter and (keto) lemon curd

More to follow....

This is banana and walnut loaf... banana sugar-free essence....

Slices of Gouda or Edam, baked for 10 mins, make great crisps or delicate crackers...

20190524_190254-800x450.jpg

Celeriac makes fab chips.... or mash.... or a "jacket" if baked in its skin. Mine were tossed in olive oil and cooked in my air fryer

20190722_163508-800x483.jpg

You can make "Yorkshire pudding" using arrowroot powder instead of flour.

20191006_170711-800x600.jpg

"chaffles".... egg and cheddar makes great waffles. Swap the cheddar for mozzarella, add a bit of ground almonds and Truvia for a sweet alternative with a few berries and a dollop of extra thick cream. Makes a great bread substitute for a bacon sarnie!

Quiche, using a pastry base made with ...yep.... you've guessed it.... ground almonds or linseed!!

Hope that's enlightened you a bit!

Wowsers @domane that's some creative cooking! I find it quite fascinating how much cream/butter etc you can eat on a keto diet, does that not affect your cholesterol? I don't really know enough about it other than it's a very low carb diet and you can't eat fruit, I like to think I'm quite healthy and a good healthy weight as I am but I just can't live without fruit, I know it's full of sugar/carbs but I would rather eat fruit than cake or bread even though your recipes look amazing.

@KiteRider..... I'll make some 90-sec bread tomoz and video myself doing it (and the recipe)

Cholesterol is more affected by sugar and carbs. Humans don't actually NEED carbs, our bodies only need protein and fat to function. Saturated fat is not unhealthy until it is mixed with sugar and carbs. Lots of people on keto have reversed their type 2 diabetes and lowered their cholesterol levels.

My friend reversed her type 2 diabetes by doing this.
I'm really interested in the recipes for all of these, I'll have to look them up, I think I would struggle as I don't eat meat, but any alternative to carbs has got to be a step in the right direction.

Well done on the diet.

I am on a new diet, but it's not new as started it in June. And it's not a diet anymore because it's how I eat.
Also like you I have discovered how to bake and how to my new favourite word - substitute - that for this.
I also discovered I love nut butter, oh yummy.
Once your taste buds have adapted you don't miss what you had and in fact I made chocolate brownies and I put in too much chocolate as they were too sweet.

My diet is called Migraine Free and boy it's working!!

I love nut butter too..... I mix PB 50/50 with cream for a "dessert" and it's plenty sweet enough as is. I used to have such a sweet tooth..... my life was controlled by sugar. Now, if I make a recipe with artificial sweetener, I only use about a quarter of it or else it is far too sweet.

Oh yes peanut butter mousse is lush.

I don't buy sugar. I don't put in teas/ coffee/ with cereal.
I find that natural sugars are plenty, especially if using milk or cream.
My whipped cream gets told to form peaks without sugar you don't need it. ;)

Nobody has said it needs sugar, so nobody has noticed it's not there.

I think with diets it dependent on what your body needs. We don't need sugar, all food already contains it. It's one of my bug bears with horse feed. The horse doesn't need molasses to eat the food.

I couldn't survive without carbs, my metabolism is so fast I'd be permently hungry without them.
But I don't think FOMO is something you need to worry about because that food looks and sounds amazing!
Can you overdose on almonds? :D

Ha, no. But you can on Brazil nuts! They are very high in selenium which cab be detrimental in large amounts. RDA for Brazil's is two nuts!

Oh, I make chocolate Brazils too by melting Lindt 90% chocolate (we are allowed on keto), dipping them in and then freezing to set.
