ginger biscuits

I fancy making some ginger biscuits tomorrow, but I'm no baker! - has anyone got any nice easy recipes? I have got the basic ingredients obviously plus ginger / cinnamon / nutmeg etc, no brown sugar though and no treacle / golden syrup (in a recipe with syrup I'm thinking I could substitute it for honey? - but not sure how honey goes with ginger tastewise?).

I will ask T what he does - he hasn't made biccies for two years lol as we are both dieting but I will ask him (his recipes are not fancy but they do work)

Look up Ginger Granthan biscuits, used to make those as a kid, love the honeycomb like texture in the middle of these :smile:
