I do the hunters and I have perfect upper body position at the trot and canter but my heel just bounce up and down all the time, is there anyway to stop the bouncing?

Unless it is excessive enough to lose stirrups, it is the best thing to be doing for absorbing the movement. Take it from one with bad ankles, knees and hips, absorbing means moving not staying stock still in the perfect positon,:)

If you mean slapping down in them with every stride, then they may not be the right length. Because of my bent body, I go have long stirrups and I only feel them touch the bottom of my foot if I fall sideways. Comes from a lot of bareback, they are just a safety net.
