At my RS I also asked for certain instructors and they chose the horses. I used to ride about 5 different horses - I think they changed them depending on what we were doing - jumping, lunging etc.
I think it is more important to get the right instructor and then just ride what they give you (as long as you feel safe). I'm paying them for their expertise and if they think I need to ride a horse to learn a specific thing, then I probably do. I actually liked going on different horses as you learn different things from them.
Now I am having lessons on my own horse and I realise how much more responsive he is and how much more accurate I have to be with my aids, but my lessons at the RS on all those different horses have certainly taught me a lot.
